A chimneyed stretch-tent with log-burners for those times of year that are not quite indoor, but not quite outdoor either, is a new acquisition at the Hare & Hounds. Drawing on the natural larder of the Vale of Glamorgan, its kitchen is a hive of productive activity, baking sourdough bread, culturing butter and turning out fresh pasta. Dining goes on amid stripped floors and whitewashed brickwork, with knowledgeable, friendly staff on hand to help, and while the cooking certainly aims to cut a dash, there is no undue ceremony – not when Cardigan Bay crab arrives on a duck-fat chip. Scallops are baked and served in a butter of the smoked roe, before comforting main dishes furnish rolled and stuffed pork belly in cider-mustard sauce, or steamed halibut with cockles in langoustine sauce. Don't miss the sides either: tenderstem broccoli and anchovy dressing were made for each other. Finish with a rhubarb soufflé, or perhaps treacle tart escorted by a distinctly classy Earl Grey ice cream. A single-sheet wine list majors in French, Spanish and Italian classics, with bottles from £19.
